Breakfast Recipes

We are often asked for the recipes we serve at Cleftstone breakfasts, and are delighted to share. We have included a few favorites here, and hope you enjoy them. If you have stayed here and would like the recipe for something you had, please drop us a line, we will be happy to send it to you.

Creme Brulee Baked French Toast

1-inch slices of dense white bread
2 cups milk
1 stick of butter
6 eggs
1 cup brown sugar
1 tbsp vanilla
1 tbsp orange liquor or extract

Melt butter, add brown sugar and pour into the bottom of a 9X13 glass dish. Place the bread on the butter mixture. Blend the egg, milk and extracts and pour over the bread. Soak overnight. Bake in a preheated 350° oven for one hour.

Baked Apple French Toast
Place peeled, cored and sliced apples on the butter mixture. Instead of the orange extract, add 1 tsp cinnamon to the liquid mixture. Spinkle cinnamon on the bread before baking.

Three Pepper Quiche

1 pre-baked 9" shell
1/4 each of a red, orange and green pepper, chopped (seeds removed)
1 cup Monterey Jack cheese, shredded
4 eggs
2 cups light cream
3/4 tsp salt
1/4 tsp black pepper
1/8 tsp cayenne pepper

Spread the peppers on the bottom of the prepared crust, and cover with cheese. Beat eggs with a whisk. Add cream, salt, and black and cayenne peppers. Pour egg mixture over peppers and cheese. Bake at 425° for 45 minutes.

Cleftstone Blueberry Muffins

2 cups flour
1 cup sugar
1 tbsp baking powder
1 cup blueberries
1/2 cup oil
1 egg
3/4 cup milk

Preheat oven to 425°. Mix dry ingredients. Add wet ingredients. Sprinkle a little sugar over the blueberries and add to mixture. Bake for 14 minutes or until firm in the middle. Makes 12 muffins.

Sour Cream Coffeecake

2 sticks of margarine
3 eggs
2 cups sugar
1 cup sour cream
2 cups flour
1 tsp baking powder
1 tsp vanilla

Layer Mix
1 tsp cinnamon
2 tbsp powdered sugar
1/2 cup chopped nuts

Preheat oven to 350°. Mix together margarine, eggs, sugar, sour cream. Add dry ingredients and vanilla. Grease well a bundt pan. Layer batter first, then the layer mix, then batter, then layer mix, and then batter. Bake for 50 minutes. Let sit for 10 minutes and remove carefully from the pan.
